Earthy sweetness, and beautiful color. Here is an easy way to prepare this delicious and affordable vegetable.


  • 2lb Bag of Nature’s Finest Beets
  • 2 Tablespoons of Olive oil
  • Salt and Pepper to taste
  • Parsley


  1.  Wash beets thoroughly in cold water to remove dirt.
  2.  Cut the top and bottom off the beets, and peel the beets with a potato peeler.
  3.  Cut the beets into large bite-sized chunks.
  4.  Mix the beets in a bowl with Olive Oil, salt and pepper.
  5.  Cover a baking pan or a piece of foil with parchment paper (so that the beets are sealed in, but loosely wrapped).
  6.  Cook at 400 degrees farenheit for 45-60 minutes – or until the beets can be easily poked with a fork.
  7.  Garnish with parsley and serve as is, or let them cool and add to a fresh salad.
