Earthy sweetness, and beautiful color. Here is an easy way to prepare this delicious and affordable vegetable.
Ingredients:
- 2lb Bag of Nature’s Finest Beets
- 2 Tablespoons of Olive oil
- Salt and Pepper to taste
- Parsley
Instructions:
- Wash beets thoroughly in cold water to remove dirt.
- Cut the top and bottom off the beets, and peel the beets with a potato peeler.
- Cut the beets into large bite-sized chunks.
- Mix the beets in a bowl with Olive Oil, salt and pepper.
- Cover a baking pan or a piece of foil with parchment paper (so that the beets are sealed in, but loosely wrapped).
- Cook at 400 degrees farenheit for 45-60 minutes – or until the beets can be easily poked with a fork.
- Garnish with parsley and serve as is, or let them cool and add to a fresh salad.
